I don’t really see the attraction of AirBNBs in Bangkok given they proliferation of hotels at every price point. Even the $50 p/night hotels are comfortable with breakfast inclusive that is always nice and one less thing to organise. And at a hotel you get the sheets changed every day for you 😉
Each to their own of course.

Just book a taxi for the night. I would probably say one of the private green/yellow taxis as they are private operators. Offer them enough and they’ll stay with you for the night, and maybe even provide some advice if you are looking for anything in particular.

Why don’t you spread out beyond expat and tourist land? If you are looking to eat Thai food in particular, Sukhumvit isn’t good by Thai standards.
Some contrarian ideas -
For a spectacular evening river view - The Deck at Arun Residence, Chao Phra River
Night Walking Food Tour - Chinatown at Yaowarat Road, easily reached now by MRT now.
Getting out and chilling out - Koh Kret, chilled out island on the river in North Bangkok. Not too far out, and you won’t feel like you’re in Bangkok.
Noveau bars/arts - Soi Nana, yeah not the one you are thinking of. It’s a street near Hua Lamphong Station of old shops that have been renovated into cool little bars and art galleries.
Bangkok is a mega-city, and options abound everywhere beyond a 3km strip between Nana and Thonglor BTS stations.

Not a chance. The recent outbreaks in NZ, Vietnam and Japan have spooked the Thais and made them realise how quickly things can change. A TAT contact said,after a presentation on ‘opening Phuket’, that realistically they were hoping for Qtr2 2021.
Speaking of change, not a day goes by and another For Lease/Rent sign appears in the Sukhumvit area. Businesses that thought perhaps six months closure back in March have just given up now. Very sad.
Only money to be made is in hotels getting certified as a quarantine hotel. 70-100k baht per PERSON for a 14-day stay with food included. If you’re lucky you get 1hr outdoor solitary time in an 8x4.
